Totally lost tortilla pizzas (click for recipe) found us on an over night stop just before the Guatemalan border in Mexico one tropical eve. After a fairly hefty drive down the west cost, we stumbled into a village of sorts. Set right on the ocean with a couple of beach front eateries and zero tourists we were happily attended to by some confused and friendly locals. They were as confused as to how we got there as we were. All in all they set us up with some ice cold cerveza and a mediocre lunch. From there we found some rustic camping right close to town and hit up La Tienda for some groceries. After rummaging through the one isle, we were able to purchase some corn tortillas, two tomatoes and some hot sauce. Not exactly the all you can eat buffet at the Bellagio, thou were creative. Back at camp the four of us split up jobs, one gathering wood, one tending a fire, one mixing cocktails and one cooking. Between are combined coolers we managed some salsa, cooked chicken leg, a bit of cheese and found some avocados patiently awaiting our arrival at the base of a near by tree. Enter pizza time…With the coals a burning and a grate overtop we managed some salsa as the base on our tortillas, fresh slices of avocado, bits of shredded chicken, a light serving of cheese and fresh tomato slices. Over a low heat and a few glasses of wine later, we had been found by our thin crust, totally lost tortilla pizzas. New friends and good times amass. I might also mention we had a draft dodger from France make his way over for some Francophone conversation with our Quebecois dinner guests, this poor guy had been hiding out in Mexico for years and looked like he’d been without a hot meal in about as long. Totally lost tortilla pizzas:
6- 5” Corn tortillas *If your ambitious you can make the tortillas, if your in Mexico they’ll be a couple of pesos away free! 2 Fresh tomatoes ¾ Cup thinly diced salsa fresca (3 tomatoes thinly diced, 1TBSP diced red onion,1/8 diced jalapeno, smidg of black pepper, diced clove of garlic, tsp of diced cilantro. If you want to get a crazy, toss in a bit of mango) 1 Ripe avocado 16 oz of cheese *preferable mozza or a light easy to melt cheese ½ Cup cooked chicken. Shredded or diced Hot sauce *Optional* *Dividing all ingredients equally between the pizzas, spread salsa as you would a sauce on the tortillas. Add chicken and thinly sliced avocado, then sprinkle with cheese and top with slices of tomato. Place about a foot above coals from an open fire, or if your lucky enough to have an oven place on parchment paper on a baking sheet or a pizza stone at 400oF for 8-10mins or until the bottom is crispy. If so desired top with hot sauce. Serve with 4 or 7 glasses of red or white wine, or beer or rum, or maybe margaritas and add a large helping of new friends. Serves 3-4ppl or 1-2 friends whom have already consumed all of the drinks listed above.
