These little poulets of perfection were dreamnet up with a Mexican friend and I over Irish Whiskey and beers one night... Or was that one early morning??? (Click for recipe) Ingredients: 2lbs Large chicken wings (8-11/lb is a good size) *Don’t buy the cheap fatty ones, gross. 1.5 Litres of light or amber ale. Best to use the same beer you plan to enjoy with your wings 1 Cup Irish whiskey 500ml chicken or vegetable stock 3 TBSP seasoning salt 3 TBSP sea salt (don’t use the cheap one that’s fine and super sodium it’s like a cowlick) 2 TBSP cracked black pepper ¼ Cup paprika 1 White onion Bowl big enough for wings plus 2 liters of liquids. Enjoy the first ¼ of the glass of beer. Chop onion into thick chucks about 1” x 1” and add to mixture Then mix wings together with all dry ingredients..
Enjoy the 2nd ¼ of the glass of beer. Dump on chicken stock and beer then cover with lid or saran wrap. Enjoy 3rd ¼ of the glass of beer. Let wings marinate for 24hrs mixing around every 3-4 hours or whenever you go to the fridge for another beer. Please finish the rest of your glass of beer and get started on calling friends for wings tomorrow or work on a nice bbq sauce for them. My favorite is at the bottom. * If you’re on a backpackers budget or just a cheap bastard feel free to choose the cheapest beer you can get your hands on and that whiskey that you knows is going to either make you the life of the party or get your ass kicked! BREADING: 3 Cups white flour 1 TBSP black pepper 1 TBSP seasoning salt 1 TBSP garlic powder Mix all ingredients together and toss with well drained wings then bang off excess flour before placing on baking sheet with parchment paper. COOKING: Preheat oven to 375oF for 20 minutes or however long it takes you to enjoy one of those amber ales you’ve been drooling about all day. Place banged off wings on parchment (not wax) paper in oven for 30 minutes. Remove wings turn over and cook for another 15 minutes or until there is no blood in the middle. THE SAUCE: If you’re feeling really ambitious you could make the BBQ sauce from scratch. I’m guessing if your specialty is making wings then ambition isn’t your middle name, so will doctor up a nice easy one you can call your own to really impress your buds. SWEET AND SMOKEY CHIPOTLE BBQ: 2 Cups original BBQ sauce *Kraft is a nice one to blend flavors with. Again don’t get the cheap stuff or anything BOLD just a quality regular sauce or you’ll have too many flavors on the go. ¼ Cup liquid honey 1 Smoked chipotle pepper finely chopped or blended 1 Glass of beer Just slam the beer first for this one as you’ll already have a light glow from the wing making and it’s more fun to cook with a buzz. Wearing a rubber glove. On a cutting board that’s easy to clean like a glass one. Remove one chipotle pepper from a can and finely dice. In a bowl mix together BBQ sauce and honey & let stand for 24hrs. Whamo shizamo you just made your own BBQ sauce you can brag to your buds about while you’re all enjoying wings and beers at your place. When everyone is standing around looking to be impressed by you, toss those fresh from the oven wings in your very own BBQ sauce and revel in success.
